Camarones a la Diabla is a bold and spicy Mexican shrimp dish simmered in a fiery red chile-tomato sauce. It’s quick to make, packed with flavor, and perfect for spice lovers!
Ingredients

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

3 dried guajillo chilies (stems and seeds removed)

2 dried arbol chilies (for heat – adjust to taste)

2 medium tomatoes, chopped

2 garlic cloves

1/4 small onion

Salt and pepper, to taste

Fresh lime juice (optional, for serving)
Instructions

Prepare the Sauce:
Soak guajillo and arbol chilies in hot water for 10 minutes until soft. Blend with tomatoes, garlic, onion, and a splash of soaking water until smooth. -
Cook the Sauce:
Heat 1 tbsp oil in a skillet over medium heat. Strain the sauce into the pan. Simmer for 5–7 minutes until slightly thickened. Season with salt and pepper. -
Cook the Shrimp:
In a separate pan, heat 1 tbsp oil. Add shrimp and cook for 2–3 minutes per side, or until just pink. -
Combine:
Add cooked shrimp to the sauce. Toss to coat and simmer for 2 more minutes. -
Serve:
Enjoy hot with rice, tortillas, or crusty bread. Squeeze fresh lime on top for extra zing
