Description

This vibrant salad combines tender tortellini with bright broccoli pesto for a fresh, herb-packed meal. Easy to prepare and perfect for lunches, picnics, or light dinners!


Ingredients

  • 12 oz cheese tortellini

  • 2 cups broccoli florets, steamed

  • ½ cup basil pesto (store-bought or homemade)

  • ¼ cup grated Parmesan cheese

  • 1 cup cherry tomatoes, halved

  • 2 tbsp pine nuts or walnuts (optional)

  • Salt & pepper, to taste


Instructions

  1. Cook tortellini according to package instructions; drain and cool slightly.

  2. Steam broccoli until tender-crisp, then chop into small pieces.

  3. In a large bowl, toss tortellini, broccoli, pesto, Parmesan, and cherry tomatoes together.

  4. Season with salt and pepper. Sprinkle nuts on top if using.

  5. Serve chilled or at room temperature.

Notes

  • Swap basil pesto for spinach or kale pesto for a twist.

  • Add grilled chicken or chickpeas for extra protein.
