Description

Enjoy a moist and flavorful Gluten-Free Strawberry Cake perfect for any celebration or sweet treat.


Ingredients

2 cups gluten-free all-purpose flour blend 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 3/4 cup unsalted butter, softened 1 cup granulated sugar 3 large eggs 1 teaspoon vanilla extract 1/2 cup sour cream 1 cup fresh strawberries, chopped 1/4 cup milk (dairy or non-dairy)


Instructions

Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan. In a bowl, whisk gluten-free flour, baking powder, baking soda, and salt. In a separate large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract and sour cream. Gradually add dry ingredients alternating with milk, beginning and ending with dry ingredients. Mix until combined. Fold in chopped strawberries gently. Pour batter into prepared pan and smooth the top. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. Let cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, use fresh strawberries. Serve with whipped cream or a dusting of powdered sugar. Store covered at room temperature for up to 2 days or refrigerate for longer freshness.
