Description
Bright and tangy pickled cauliflower and carrots flavored with earthy turmeric. A crunchy, vibrant side or snack.
Ingredients
1 small head cauliflower, cut into florets 2 large carrots, peeled and sliced 1 cup white vinegar 1 cup water 2 tablespoons sugar 1 tablespoon salt 1 tablespoon ground turmeric 2 cloves garlic, peeled 1 teaspoon black peppercorns
Instructions
Prepare cauliflower and carrots by cutting and slicing. In a pot, combine vinegar, water, sugar, salt, and turmeric. Bring to a boil to dissolve sugar and salt. Place garlic, peppercorns, cauliflower, and carrots into a sterilized jar. Pour hot vinegar mixture over vegetables, covering them completely. Seal jar and let cool to room temperature. Refrigerate for at least 24 hours before serving. Store in refrigerator up to 2 weeks.

Use sterilized jars to ensure freshness. Adjust sugar and salt to taste. Great as a side dish or topping for salads and sandwiches.
