Ingredients

  • 2 tbsp butter

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 3 cups diced potatoes

  • 3 cups seafood stock or clam juice

  • 1 cup heavy cream

  • 1 lb mixed seafood (fish chunks, shrimp, scallops)

  • 2 celery stalks, diced

  • 1 cup corn kernels (fresh or frozen)

  • Salt & pepper, to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  1. Sauté Aromatics:
    Melt butter in a large pot. Add onion and garlic; cook until soft.

  2. Cook Potatoes:
    Add potatoes, celery, and seafood stock. Simmer until potatoes are tender (about 15 minutes).

  3. Add Seafood & Corn:
    Stir in mixed seafood and corn. Cook until seafood is just done, about 5-7 minutes.

  4. Finish with Cream:
    Stir in heavy cream, season with salt and pepper. Heat through without boiling.

  5. Serve:
