Ingredients

2 tbsp olive oil

1 onion, chopped

2 garlic cloves, minced

2 cans (15 oz each) white beans, drained and rinsed

3 cups vegetable or chicken broth

1 tsp dried thyme or rosemary

Salt & black pepper, to taste

½ lemon, juiced

Fresh parsley or grated Parmesan (optional, for garnish)
Instructions

Sauté onion in olive oil over medium heat until soft, about 5 minutes.

Add garlic and herbs, cook for 1 minute.

Add beans and broth, bring to a simmer and cook for 15–20 minutes.

Blend half the soup (or all for smoother texture) with an immersion or regular blender.

Return to pot, stir in lemon juice, and season with salt and pepper.
