Description

This ultra-creamy white bean soup is hearty, comforting, and packed with flavor. Made with simple pantry staples, it’s the perfect go-to meal on a cozy night. Blended beans create a luscious texture without heavy cream—wholesome and indulgent all at once.


Ingredients

  • 2 tbsp olive oil

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 2 cans (15 oz each) white beans, drained and rinsed

  • 3 cups vegetable or chicken broth

  • 1 tsp dried thyme or rosemary

  • Salt & black pepper, to taste

  • ½ lemon, juiced

  • Fresh parsley or grated Parmesan (optional, for garnish)


Instructions

  • Sauté onion in olive oil over medium heat until soft, about 5 minutes.

  • Add garlic and herbs, cook for 1 minute.

  • Add beans and broth, bring to a simmer and cook for 15–20 minutes.

  • Blend half the soup (or all for smoother texture) with an immersion or regular blender.

  • Return to pot, stir in lemon juice, and season with salt and pepper.

  • Serve hot, garnished with parsley or Parmesan if desired.

Notes

  • For a richer soup, stir in a splash of cream or coconut milk at the end.

  • Add chopped spinach or kale for extra greens.

  • Great with crusty bread or a grilled cheese on the side!
