Ingredients

2 cups cooked shredded chicken or beef

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

1 tsp chili powder

Salt and pepper, to taste

12 small corn or flour tortillas

Oil, for frying (or cooking spray for baking)
Instructions

Mix Filling:
Combine shredded meat, cheese, onions, chili powder, cumin, salt, and pepper. -
Prepare Tortillas:
Warm tortillas to make them pliable. -
Assemble Taquitos:
Place 2–3 tbsp filling on each tortilla and roll tightly. -
Cook:

Fry: Heat oil in a skillet and fry taquitos seam-side down until golden and crispy (about 2–3 minutes per side).

Or Bake: Place taquitos on a baking sheet, spray with cooking spray, and bake at 425°F (220°C) for 15–20 minutes until crispy, turning halfway.
