Ingredients

For the Salad:

  • 2 cups baby spinach

  • 1 cup kale, finely chopped

  • 1/2 cup sliced strawberries

  • 1/2 cup blueberries

  • 1/4 cup raspberries

  • 1/4 cup pomegranate seeds

  • 1/4 cup chopped walnuts or almonds

  • 2 tbsp chia seeds or hemp hearts

  • 1/4 cup crumbled feta cheese (optional)

For the Creamy Dressing:

  • 1/2 cup plain Greek yogurt

  • 1 tbsp honey or maple syrup

  • 1 tbsp lemon juice

  • 1 tsp apple cider vinegar

  • Pinch of salt and pepper


Instructions

  1. Make the Dressing: In a small bowl, whisk together yogurt, honey, lemon juice, vinegar, salt, and pepper until smooth.

  2. Assemble the Salad: In a large bowl, combine spinach, kale, berries, pomegranate seeds, nuts, and seeds.

  3. Toss & Serve: Drizzle with dressing and gently toss. Top with feta if using. Serve immediately.
