Description

These indulgent layered bars feature a buttery graham cracker crust, rich chocolate mousse center, and a toasted marshmallow topping—bringing all the nostalgic s’mores flavors into an elegant, no-bake dessert.

Crust:

  • 1½ cups graham cracker crumbs

  • 1/4 cup granulated sugar

  • 6 tbsp melted butter

Chocolate Mousse Layer:

  • 1½ cups semi-sweet chocolate chips

  • 1½ cups heavy cream (divided)

  • 1 tsp vanilla extract

Marshmallow Topping:

  • 2 cups mini marshmallows


Instructions

  1. Make Crust: Mix graham cracker crumbs, sugar, and melted butter. Press into a lined 8×8″ pan. Chill for 10 minutes.

  2. Make Mousse: Heat 1/2 cup cream to simmer. Pour over chocolate chips; stir until melted. Let cool. Whip remaining 1 cup cream to stiff peaks and fold into chocolate. Spread over crust.

  3. Chill: Refrigerate 3–4 hours until set.

  4. Add Marshmallows: Evenly layer mini marshmallows on top.

  5. Toast Topping: Use a kitchen torch or broiler to lightly toast marshmallows.

  6. Slice & Serve: Cut into bars and enjoy!

Notes

  • Line the pan with parchment for easy removal.

  • For deeper flavor, add a pinch of sea salt to the crust or chocolate.

  • Don’t have a torch? Place under broiler for 30–60 seconds—watch closely!

  • These bars are best served chilled but allow to sit at room temp for 10 minutes for creamier texture.
