Description

Singapore Chow Mei Fun is a vibrant, stir-fried rice noodle dish loaded with vegetables, protein, and a bold curry flavor. It’s a quick and satisfying meal that brings your favorite takeout flavors right to your kitchen!


Ingredients

  • 8 oz rice vermicelli noodles

  • 2 tbsp oil (vegetable or sesame)

  • 2 eggs, beaten

  • 1/2 lb shrimp or chicken (or both), thinly sliced

  • 1/2 onion, sliced

  • 1 cup shredded cabbage

  • 1/2 red bell pepper, sliced

  • 1 carrot, julienned

  • 2 green onions, chopped

  • 1 tbsp curry powder

  • 2 tbsp soy sauce

  • 1 tbsp oyster sauce (optional)

  • Salt & pepper, to taste


Instructions

  • Soak Noodles:
    Cover rice noodles with hot water for 5–7 minutes until softened. Drain and set aside.

  • Scramble Eggs:
    Heat 1 tbsp oil in a wok or large skillet. Add eggs and scramble. Remove and set aside.

  • Cook Protein:
    Add remaining oil. Stir-fry shrimp or chicken until cooked through. Remove from pan.

  • Cook Vegetables:
    In the same pan, stir-fry onion, bell pepper, cabbage, and carrot until tender-crisp.

  • Combine & Season:
    Return noodles, eggs, and protein to the pan. Add curry powder, soy sauce, oyster sauce (if using), and toss to combine.

  • Finish & Serve:
    Sprinkle with green onions and adjust seasoning with salt and pepper. Serve hot.

Notes

  • Want it spicy? Add a pinch of red pepper flakes or a splash of sriracha.

  • Tofu is a great vegetarian alternative.

  • Pre-chopped stir-fry vegetable mixes work well and save time.
