Singapore Chow Mei Fun is a vibrant, stir-fried rice noodle dish loaded with vegetables, protein, and a bold curry flavor. It’s a quick and satisfying meal that brings your favorite takeout flavors right to your kitchen!
Ingredients

8 oz rice vermicelli noodles

2 tbsp oil (vegetable or sesame)

2 eggs, beaten

1/2 lb shrimp or chicken (or both), thinly sliced

1/2 onion, sliced

1 cup shredded cabbage
-
1/2 red bell pepper, sliced

1 carrot, julienned
-
2 green onions, chopped
-
1 tbsp curry powder
-
2 tbsp soy sauce
-
1 tbsp oyster sauce (optional)

Salt & pepper, to taste
Instructions

Soak Noodles:
Cover rice noodles with hot water for 5–7 minutes until softened. Drain and set aside. -
Scramble Eggs:
Heat 1 tbsp oil in a wok or large skillet. Add eggs and scramble. Remove and set aside. -
Cook Protein:
Add remaining oil. Stir-fry shrimp or chicken until cooked through. Remove from pan. -
Cook Vegetables:
In the same pan, stir-fry onion, bell pepper, cabbage, and carrot until tender-crisp. -
Combine & Season:
Return noodles, eggs, and protein to the pan. Add curry powder, soy sauce, oyster sauce (if using), and toss to combine. -
Finish & Serve:
Sprinkle with green onions and adjust seasoning with salt and pepper. Serve hot.
