Inspired by the beloved Girl Scout cookie, these Samoa Brownie Bars layer rich chocolate brownie, gooey caramel, toasted coconut, and a chocolate drizzle for an indulgent, chewy-crunchy dessert that’s simply irresistible.
Ingredients
For the Brownie Base:

1 box brownie mix (plus eggs, oil, and water as directed)
or your favorite homemade brownie recipe
Topping:

2 cups sweetened shredded coconut

1 (11 oz) bag soft caramels, unwrapped

3 tbsp milk or heavy cream

½ tsp vanilla extract

½ cup semi-sweet chocolate chips, melted (for drizzle)
Instructions

Bake the Brownies:
Prepare and bake brownies in a 9×13-inch pan according to box or recipe instructions. Let cool. -
Toast the Coconut:
While brownies cool, toast shredded coconut in a dry skillet or oven at 350°F (175°C) until golden, stirring frequently. Set aside. -
Make the Caramel Topping:
In a microwave-safe bowl, melt caramels with milk in 30-second intervals, stirring until smooth. Stir in vanilla. -
Assemble the Bars:
Mix toasted coconut with caramel and spread evenly over the cooled brownies. Press lightly to adhere. -
Drizzle with Chocolate:
Melt chocolate chips and drizzle over the top. Let set before slicing into bars.

For easier slicing, chill the bars for 10–15 minutes before cutting.
