For the Chicken Tacos:

  • 1 lb boneless chicken thighs or breasts, cut into strips

  • 1 tbsp olive oil

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • 1/2 tsp smoked paprika

  • Salt and pepper, to taste

  • 8 small corn or flour tortillas

  • Toppings: shredded lettuce, diced onion, cotija cheese, avocado, lime wedges

For the Green Sauce:

  • 1 ripe avocado

  • 1/2 cup fresh cilantro

  • 1 jalapeño, seeded (optional for less heat)

  • 1 garlic clove

  • Juice of 1 lime

  • 1/4 cup sour cream or Greek yogurt

  • Salt, to taste

  • 23 tbsp water (to thin)


Instructions

  1. Cook the Chicken:
    In a skillet, heat olive oil over medium heat. Add chicken, season with chili powder, cumin, paprika, salt, and pepper. Cook 6–8 minutes until browned and fully cooked. Set aside.

  2. Make the Green Sauce:
    In a blender, combine avocado, cilantro, jalapeño, garlic, lime juice, sour cream, and salt. Blend until smooth. Add water a little at a time until desired consistency is reached.

  3. Warm the Tortillas:
    Heat tortillas on a skillet or directly over a flame for a few seconds on each side.

  4. Assemble Tacos:
    Fill each tortilla with cooked chicken, then top with lettuce, onion, cotija cheese, avocado slices, and a generous drizzle of green sauce.
