Description
This Rhubarb Crisp combines tart rhubarb with a golden oat crumble topping. A perfect warm dessert for spring and summer.
Ingredients
4 cups fresh rhubarb, chopped
3/4 cup granulated sugar
1 tablespoon cornstarch
1 teaspoon vanilla extract
1 cup rolled oats
3/4 cup all-purpose flour
2/3 cup brown sugar
1/2 cup unsalted butter, melted
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Instructions
1. Preheat oven to 350°F (175°C).
2. In a mixing bowl, combine rhubarb, granulated sugar, cornstarch, and vanilla extract. Mix well and transfer to a greased 9-inch baking dish.
3. In another bowl, stir together oats, flour, brown sugar, cinnamon, and salt. Add melted butter and mix until crumbly.
4. Sprinkle the crumble topping evenly over the rhubarb mixture.
5. Bake for 35–40 minutes or until the topping turns golden brown and the filling bubbles.
6. Cool for 10 minutes before serving. Enjoy warm, optionally with vanilla ice cream.
Notes
You can mix in strawberries for a fruitier twist.
Use gluten-free oats and flour if needed.
Store leftovers in the refrigerator for up to 3 days.
