  • 1 tsp ground cumin

  • 1/2 tsp turmeric

  • 1/2 tsp chili powder (adjust to taste)

  • 1/4 tsp black pepper

  • 1 cup tomato puree (or canned crushed tomatoes)

  • 1/2 cup heavy cream (or full-fat coconut milk)

  • 1 tbsp tomato paste (optional, for richness)

  • 1 tsp sugar (balances acidity)


Instructions

  1. Sauté Aromatics: Heat oil and 1 tbsp butter in a pan over medium heat. Sauté onions until soft. Add garlic and ginger; cook 1 minute.

  2. Spice It Up: Stir in garam masala, cumin, turmeric, chili powder, salt, and pepper. Cook until fragrant (30 seconds).

  3. Cook Chicken: Add chicken pieces; sear until golden and nearly cooked through, about 5–7 minutes.

  4. Simmer Sauce: Stir in tomato puree and tomato paste. Simmer 5 minutes.

  5. Add Cream & Finish: Lower heat, stir in cream and sugar. Simmer another 5 minutes until thickened. Stir in remaining 1 tbsp butter for a silky finish.

  6. Serve: Garnish with cilantro and serve hot with naan or basmati rice.

Notes

  • Chicken thighs yield juicier results, but breasts work fine too.
