Description

These Pistachio Cookie Bars are chewy, nutty, and packed with irresistible pistachio flavor. They’re the perfect blend of soft cookie texture and crunchy nutty bites—ideal for parties, gifting, or just treating yourself!


Ingredients

  • 1 cup unsalted butter, softened

  • 1 cup brown sugar

  • ½ cup granulated sugar

  • 2 large eggs

  • 2 tsp vanilla extract

  • 2 ¼ cups all-purpose flour

  • 1 (3.4 oz) box instant pistachio pudding mix

  • ½ tsp baking soda

  • ¼ tsp salt

  • 1 cup shelled pistachios, chopped

  • ½ cup white chocolate chips (optional)


Instructions

  • Preheat Oven:
    Preheat to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment.

  • Make Dough:
    Cream butter and both sugars until light and fluffy. Add eggs and vanilla; mix well. Stir in flour, pudding mix, baking soda, and salt. Fold in pistachios and white chocolate chips (if using).

  • Bake:
    Spread dough evenly in the pan. Bake for 22–25 minutes, or until golden and a toothpick comes out clean.

  • Cool & Cut:
    Allow to cool completely in the pan before cutting into bars.

Notes

  • For vibrant green bars, add a drop of green food coloring.

  • Swap white chocolate chips with dark chocolate for a richer twist.

  • Store in an airtight container at room temperature for up to 5 days.
