Ingredients
-
1 lb (16 oz) potato gnocchi
-
1 bunch asparagus, trimmed and cut into 1-inch pieces
-
⅓ cup basil pesto (store-bought or homemade)
-
2 tbsp olive oil
-
¼ cup grated Parmesan (optional)
-
Salt and pepper, to taste
-
Lemon zest (optional, for brightness)
Instructions
-
Boil Gnocchi & Asparagus:
Bring a large pot of salted water to a boil. Add gnocchi and asparagus. Cook for 2–3 minutes or until gnocchi floats and asparagus is tender-crisp. Drain. -
Sauté Gnocchi (Optional):
For extra texture, sauté cooked gnocchi and asparagus in olive oil over medium heat until lightly golden, about 3–4 minutes. -
Add Pesto:
Remove from heat and stir in pesto. Toss until evenly coated. Add salt, pepper, and lemon zest to taste. -
Serve:
Plate warm and sprinkle with grated Parmesan if desired.
Notes
-
For a protein boost, add grilled chicken, shrimp, or chickpeas.
-
Swap asparagus for green beans or peas if needed.
-
Homemade pesto elevates the flavor but quality store-bought works beautifully too.
