  • 1 bunch asparagus, trimmed and cut into 1-inch pieces

  • ⅓ cup basil pesto (store-bought or homemade)

  • 2 tbsp olive oil

  • ¼ cup grated Parmesan (optional)

  • Salt and pepper, to taste

  • Lemon zest (optional, for brightness)


Instructions

  • Boil Gnocchi & Asparagus:
    Bring a large pot of salted water to a boil. Add gnocchi and asparagus. Cook for 2–3 minutes or until gnocchi floats and asparagus is tender-crisp. Drain.

  • Sauté Gnocchi (Optional):
    For extra texture, sauté cooked gnocchi and asparagus in olive oil over medium heat until lightly golden, about 3–4 minutes.

  • Add Pesto:
    Remove from heat and stir in pesto. Toss until evenly coated. Add salt, pepper, and lemon zest to taste.

  • Serve:
    Plate warm and sprinkle with grated Parmesan if desired.

  • For a protein boost, add grilled chicken, shrimp, or chickpeas.
