For the Cookies:

  • 1/2 cup unsalted butter, softened

  • 1/2 cup brown sugar

  • 1/4 cup granulated sugar

  • 1 egg

  • 1 tsp vanilla extract

  • 1/2 cup cocoa powder

  • 1 cup all-purpose flour

  • 1/2 tsp baking soda

  • 1/4 tsp salt

For the Filling:

  • 2 cups mocha or coffee ice cream, softened

  • 1/3 cup creamy peanut butter

  • 1/2 cup crushed Oreo cookies


Instructions

  • Make Cookies:
    Preheat oven to 350°F (175°C). Cream butter and sugars, add egg and vanilla. Mix in cocoa, flour, baking soda, and salt. Roll into 16 small balls, flatten slightly, and bake for 8–10 minutes. Cool completely.

  • Prepare Filling:
    In a bowl, stir together softened mocha ice cream, peanut butter, and crushed Oreos until well combined. Freeze for 15–20 minutes if too soft.

  • Assemble Sandwiches:
    Scoop ice cream mixture onto 8 cookies and top with remaining cookies. Press gently. Wrap in plastic wrap.

  • Freeze:
    Freeze sandwiches for 2–4 hours or until firm.

  • Serve:
    Enjoy straight from the freezer for a refreshing, rich dessert.
