Ingredients
For the Cookies:

1/2 cup unsalted butter, softened

For the Filling:

2 cups mocha or coffee ice cream, softened

1/2 cup crushed Oreo cookies
Instructions

Make Cookies:
Preheat oven to 350°F (175°C). Cream butter and sugars, add egg and vanilla. Mix in cocoa, flour, baking soda, and salt. Roll into 16 small balls, flatten slightly, and bake for 8–10 minutes. Cool completely. -
Prepare Filling:
In a bowl, stir together softened mocha ice cream, peanut butter, and crushed Oreos until well combined. Freeze for 15–20 minutes if too soft. -
Assemble Sandwiches:
Scoop ice cream mixture onto 8 cookies and top with remaining cookies. Press gently. Wrap in plastic wrap. -
Freeze:
Freeze sandwiches for 2–4 hours or until firm. -
Serve:
Enjoy straight from the freezer for a refreshing, rich dessert.
