Ingredients

  • 12 oz rotini or pasta of choice

  • 1 cup cherry tomatoes, halved

  • 1 cup cucumber, diced

  • 1/2 cup red bell pepper, chopped

  • 1/2 cup black olives, sliced

  • 1/4 cup red onion, finely chopped

  • 1/2 cup shredded mozzarella or cubed cheese

  • 1 cup Italian dressing (store-bought or homemade)

  • Salt and pepper, to taste

  • Optional: fresh parsley or basil, chopped


Instructions

  1. Cook Pasta: Boil pasta according to package directions. Drain and rinse under cold water.

  2. Combine Ingredients: In a large bowl, toss cooked pasta with tomatoes, cucumber, bell pepper, olives, onion, and cheese.

  3. Add Dressing: Pour Italian dressing over the salad and mix until well coated.

  4. Season & Chill: Add salt, pepper, and herbs to taste. Chill for at least 30 minutes before serving.
