Description

Sweet and juicy nectarines baked under a tender, golden biscuit topping. A classic dessert bursting with summer flavors.

5 cups fresh nectarines, sliced 1 cup all-purpose flour 1 cup granulated sugar 1 teaspoon baking powder 1/2 teaspoon salt 1/2 cup unsalted butter, melted 1/2 cup milk 1 teaspoon vanilla extract 1 tablespoon lemon juice 2 tablespoons brown sugar (for topping) Optional: vanilla ice cream for serving


Instructions

Preheat oven to 375°F (190°C). In a large bowl, toss nectarines with lemon juice and 1/4 cup sugar. Set aside. In another bowl, mix flour, remaining sugar, baking powder, and salt. Add melted butter, milk, and vanilla extract. Stir until just combined. Pour nectarines into a greased baking dish. Drop spoonfuls of batter evenly over the fruit. Sprinkle brown sugar on top. Bake for 35-40 minutes until topping is golden and fruit is bubbly. Let cool slightly before serving. Serve warm with vanilla ice cream, if desired.

Notes

Use ripe nectarines for best flavor. You can substitute nectarines with peaches or plums. For a gluten-free version, use gluten-free flour blend.
