Description

This one-pan Mexican ground beef skillet is loaded with bold flavors, tender beef, veggies, and melty cheese. Ready in 30 minutes, it’s perfect for taco night, meal prep, or a cozy weeknight dinner.


Ingredients

  • 1 lb ground beef

  • 1 tbsp olive oil

  • 1/2 onion, diced

  • 1 bell pepper, diced

  • 2 garlic cloves, minced

  • 1 cup canned corn, drained

  • 1 cup black beans, drained and rinsed

  • 1 (14.5 oz) can diced tomatoes (drained slightly)

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • 1/2 tsp smoked paprika

  • Salt and pepper, to taste

  • 1 cup shredded Mexican blend cheese

  • Optional toppings: sour cream, avocado, green onions, cilantro


Instructions

  1. Cook the Beef:
    In a large skillet over medium heat, add olive oil and sauté onion and bell pepper for 3–4 minutes. Add garlic and cook 1 minute.

  2. Brown the Meat:
    Add ground beef, breaking it up with a spoon. Cook until browned and fully cooked through. Drain excess fat if needed.

  3. Add Veggies & Spices:
    Stir in corn, black beans, diced tomatoes, and all seasonings. Simmer for 5–7 minutes, allowing flavors to meld.

  4. Add Cheese:
    Sprinkle cheese over the top. Cover skillet and cook for 2–3 minutes until cheese is melted and bubbly.

  5. Serve:
    Serve hot with optional toppings or over rice, in tortillas, or with tortilla chips.

Notes

  • Make it low-carb by skipping beans and corn or serving over cauliflower rice.

  • Use ground turkey or chicken for a lighter version.

  • Spice it up with jalapeños or a dash of hot sauce.

  • Leftovers make great taco or burrito fillings!
