This one-pan Mexican ground beef skillet is loaded with bold flavors, tender beef, veggies, and melty cheese. Ready in 30 minutes, it’s perfect for taco night, meal prep, or a cozy weeknight dinner.
Ingredients

1 lb ground beef

1 tbsp olive oil

1/2 onion, diced

1 bell pepper, diced

2 garlic cloves, minced

1 cup canned corn, drained

1 cup black beans, drained and rinsed

1 (14.5 oz) can diced tomatoes (drained slightly)

1 tsp chili powder

1/2 tsp cumin

1/2 tsp smoked paprika

Salt and pepper, to taste

1 cup shredded Mexican blend cheese

Optional toppings: sour cream, avocado, green onions, cilantro
Instructions

Cook the Beef:
In a large skillet over medium heat, add olive oil and sauté onion and bell pepper for 3–4 minutes. Add garlic and cook 1 minute. -
Brown the Meat:
Add ground beef, breaking it up with a spoon. Cook until browned and fully cooked through. Drain excess fat if needed. -
Add Veggies & Spices:
Stir in corn, black beans, diced tomatoes, and all seasonings. Simmer for 5–7 minutes, allowing flavors to meld. -
Add Cheese:
Sprinkle cheese over the top. Cover skillet and cook for 2–3 minutes until cheese is melted and bubbly. -
Serve:
Serve hot with optional toppings or over rice, in tortillas, or with tortilla chips.
