Ingredients

  • 2 medium russet potatoes, peeled and diced

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 tsp ground cumin

  • 1 tsp chili powder

  • ½ tsp paprika

  • Salt and pepper, to taste

  • ½ cup beef broth or water

  • ½ cup shredded cheese (optional)

  • Fresh cilantro, chopped (for garnish)


Instructions

  • Cook the Beef:
    In a large skillet over medium heat, cook ground beef until browned. Drain excess fat if needed.

  • Add Veggies & Spices:
    Add diced onion, garlic, and potatoes. Stir in cumin, chili powder, paprika, salt, and pepper.

  • Simmer:
    Pour in beef broth. Cover and simmer for 15–20 minutes, stirring occasionally, until potatoes are tender.

  • Finish & Serve:
    Uncover, sprinkle with cheese if desired, and let it melt. Garnish with chopped cilantro and serve warm.

Notes

  • For extra heat, add a diced jalapeño or a pinch of cayenne pepper.
