Instructions

Cook the Beef:
In a large skillet over medium heat, cook ground beef until browned. Drain excess fat if needed. -
Add Veggies & Spices:
Add diced onion, garlic, and potatoes. Stir in cumin, chili powder, paprika, salt, and pepper. -
Simmer:
Pour in beef broth. Cover and simmer for 15–20 minutes, stirring occasionally, until potatoes are tender. -
Finish & Serve:
Uncover, sprinkle with cheese if desired, and let it melt. Garnish with chopped cilantro and serve warm.
