Description
This Mediterranean Chickpea Salad combines fresh vegetables, herbs, and tangy dressing for a vibrant and healthy meal or side dish.
Ingredients
1 can (15 oz) chickpeas, drained and rinsed
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, finely chopped
1/2 cup Kalamata olives, pitted and sliced
1/2 cup feta cheese, crumbled
1/4 cup fresh parsley, chopped
3 tbsp extra virgin olive oil
2 tbsp red wine vinegar
1 clove garlic, minced
1 tsp dried oregano
Salt and black pepper to taste
Instructions
1. In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, olives, feta, and parsley.
2. In a small bowl, whisk together olive oil, red wine vinegar, garlic, oregano, salt, and pepper.
3. Pour the dressing over the salad and toss gently to coat.
4. Chill for at least 30 minutes before serving for best flavor.
Notes
This salad tastes great fresh or chilled.
Add diced avocado for extra creaminess.
Serve as a side dish or over greens for a light meal.
