Ingredients

8 oz lo mein noodles or spaghetti

1 tablespoon sesame oil

1 tablespoon vegetable oil

2 garlic cloves, minced

1 cup sliced mushrooms

1 red bell pepper, julienned

1 cup shredded carrots

2 cups baby spinach

1/4 cup green onions, chopped

**Sauce:**

1/4 cup soy sauce (low sodium)

1 tablespoon oyster sauce

1 tablespoon hoisin sauce

1 teaspoon sesame oil

1/2 teaspoon sugar

1/2 teaspoon ground ginger


Instructions

1. Cook noodles according to package instructions. Drain and set aside.

2. In a small bowl, whisk together all sauce ingredients. Set aside.

3. Heat sesame and vegetable oil in a large skillet or wok over medium-high heat.

4. Add garlic and mushrooms. Cook for 2 minutes until fragrant.

5. Stir in bell pepper and carrots. Sauté until tender-crisp, about 3 minutes.

6. Add spinach and green onions, cooking until spinach wilts.

7. Add cooked noodles and sauce to the skillet. Toss everything to combine and heat through.

8. Serve immediately, garnished with extra green onions or sesame seeds if desired.

Notes

Feel free to add protein like tofu, chicken, beef, or shrimp.

Adjust vegetables based on what you have—broccoli, snap peas, or cabbage work well.
