Description

Celebrate summer with these refreshing red, white, and blue berry popsicles! Made with fresh strawberries, blueberries, and creamy yogurt, these naturally sweetened treats are festive, fruity, and perfect for 4th of July celebrations.


Ingredients

  • 1 cup strawberries, hulled and sliced

  • 1 cup blueberries

  • 1 cup vanilla Greek yogurt (or plain, sweetened to taste)

  • 12 tbsp honey or maple syrup (optional)

  • 1 tsp lemon juice (optional, for brightness)


Instructions

  1. Blend Layers:

    • Red layer: Blend strawberries with 1 tsp honey and a splash of water until smooth.

    • White layer: Stir yogurt with honey (if using).

    • Blue layer: Blend blueberries with lemon juice and a little honey (optional).

  2. Assemble Popsicles:
    Layer each mixture into popsicle molds: red (strawberry), white (yogurt), then blue (blueberry). Tap molds gently to remove air bubbles.

  3. Insert Sticks & Freeze:
    Insert sticks and freeze for 4–6 hours or until fully solid.

  4. Unmold & Enjoy:
    Run molds under warm water for a few seconds to release. Enjoy immediately!

Notes

  • You can use fresh or frozen berries—both work well.

  • Try coconut yogurt for a dairy-free version.

  • Add chopped berries between layers for extra texture.

  • Customize with raspberries, blackberries, or mango for color variations.
