Ingredients

4 large bell peppers (any color), tops cut and seeds removed

1 tbsp olive oil

1 lb ground turkey

1 small onion, diced

2 cloves garlic, minced

1 cup cooked rice (white or brown)

1 cup diced tomatoes (canned or fresh)

1/2 cup tomato sauce

1 tsp Italian seasoning

Salt and pepper, to taste

1/2 cup shredded mozzarella or cheddar (optional)

Fresh parsley or basil, for garnish
Instructions

Preheat Oven: To 375°F (190°C).

Prep Peppers: Cut tops off peppers and remove seeds. Lightly steam or microwave for 5 minutes to soften slightly.

Cook Filling: In a skillet, heat oil. Sauté onion and garlic, then add ground turkey. Cook until browned. Stir in tomatoes, sauce, rice, and seasoning. Simmer 5 minutes.

Stuff Peppers: Fill each pepper with turkey mixture. Place in a baking dish. Top with cheese if desired.

Bake: Cover with foil and bake for 30 minutes. Remove foil and bake an additional 5–10 minutes until cheese is melted and bubbly.
