Description

These ground turkey stuffed peppers are hearty, nutritious, and bursting with flavor. Packed with lean protein, veggies, and savory spices, they’re baked to perfection and make a satisfying dinner any night of the week.


Ingredients

  • 4 large bell peppers (any color), tops cut and seeds removed

  • 1 tbsp olive oil

  • 1 lb ground turkey

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 cup cooked rice (white or brown)

  • 1 cup diced tomatoes (canned or fresh)

  • 1/2 cup tomato sauce

  • 1 tsp Italian seasoning

  • Salt and pepper, to taste

  • 1/2 cup shredded mozzarella or cheddar (optional)

  • Fresh parsley or basil, for garnish


Instructions

  • Preheat Oven: To 375°F (190°C).

  • Prep Peppers: Cut tops off peppers and remove seeds. Lightly steam or microwave for 5 minutes to soften slightly.

  • Cook Filling: In a skillet, heat oil. Sauté onion and garlic, then add ground turkey. Cook until browned. Stir in tomatoes, sauce, rice, and seasoning. Simmer 5 minutes.

  • Stuff Peppers: Fill each pepper with turkey mixture. Place in a baking dish. Top with cheese if desired.

  • Bake: Cover with foil and bake for 30 minutes. Remove foil and bake an additional 5–10 minutes until cheese is melted and bubbly.

  • Serve: Garnish with parsley or basil and enjoy warm.

  • Use quinoa or cauliflower rice for a low-carb version.
