Inspired by the viral TikTok grinder sandwich, this pasta salad is packed with bold flavors—salami, provolone, crunchy veggies, and a creamy, zesty dressing—all tossed with tender pasta. It’s the perfect dish for BBQs, picnics, or meal prep!


Ingredients

  • 12 oz pasta (rotini or penne)

  • 1 cup chopped romaine lettuce

  • 1/2 cup sliced red onion

  • 1 cup cherry tomatoes, halved

  • 1/2 cup sliced pepperoncini

  • 1/2 cup sliced deli salami

  • 1/2 cup diced ham or turkey (optional)

  • 1/2 cup chopped provolone or mozzarella

  • 1/2 cup mayonnaise

  • 2 tbsp red wine vinegar

  • 1 tbsp Dijon mustard

  • 1 tsp Italian seasoning

  • Salt & pepper, to taste


Instructions

  1. Cook Pasta: Boil pasta until al dente. Drain and rinse with cold water.

  2. Make Dressing: In a bowl, whisk mayo, red wine vinegar, mustard, Italian seasoning, salt, and pepper.

  3. Combine Ingredients: In a large bowl, toss cooled pasta with meats, cheese, veggies, and dressing.

  4. Add Lettuce: Fold in romaine just before serving for crunch.

  5. Chill & Serve: Refrigerate for at least 30 minutes to let flavors meld.

Notes

  • For a spicier kick, add hot pepper relish or crushed red pepper.

  • Easily make it vegetarian by skipping the meat and adding more veggies like cucumbers or bell peppers.
