Ingredients

4 bone-in, skin-on chicken thighs

1.5 lbs baby potatoes, halved

3 tbsp olive oil

4 cloves garlic, minced

½ cup grated Parmesan cheese

1 tsp dried oregano
-
1 tsp dried thyme

Salt & pepper, to taste

Fresh parsley, chopped (for garnish)
Instructions

Preheat oven to 400°F (200°C).

Toss potatoes with 2 tbsp olive oil, half the garlic, oregano, thyme, salt, and pepper. Spread on a baking sheet.

Rub chicken with remaining olive oil, garlic, salt, and pepper. Place on top of potatoes.

Sprinkle Parmesan evenly over chicken and potatoes.

Bake for 35–40 minutes until chicken is cooked through and potatoes are golden.

Garnish with parsley before serving.

For extra crispiness, broil for 2–3 minutes at the end.
