Description

This easy, one-pan meal features juicy chicken thighs and crispy potatoes coated in a savory garlic parmesan blend. It’s a comforting dinner that’s bursting with flavor and perfect for any night of the week.


Ingredients

  • 4 bone-in, skin-on chicken thighs

  • 1.5 lbs baby potatoes, halved

  • 3 tbsp olive oil

  • 4 cloves garlic, minced

  • ½ cup grated Parmesan cheese

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • Salt & pepper, to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  • Preheat oven to 400°F (200°C).

  • Toss potatoes with 2 tbsp olive oil, half the garlic, oregano, thyme, salt, and pepper. Spread on a baking sheet.

  • Rub chicken with remaining olive oil, garlic, salt, and pepper. Place on top of potatoes.

  • Sprinkle Parmesan evenly over chicken and potatoes.

  • Bake for 35–40 minutes until chicken is cooked through and potatoes are golden.

  • Garnish with parsley before serving.

Notes

  • For extra crispiness, broil for 2–3 minutes at the end.

  • Swap chicken thighs for breasts if preferred, adjusting cooking time accordingly.

  • Add a squeeze of lemon juice before serving for brightness.
