1 prepared sugar cookie dough (or your favorite sugar cookie recipe) 8 oz cream cheese, softened 1/4 cup powdered sugar 1 tsp vanilla extract 1 cup strawberries, sliced 1 cup blueberries 1 kiwi, peeled and sliced 1/2 cup mandarin orange segments Fresh mint leaves for garnish (optional)


Instructions

Preheat oven to 350°F (175°C). Roll out sugar cookie dough on a baking sheet lined with parchment paper into a large circle. Bake for 12-15 minutes or until golden brown. Cool completely. In a bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth. Spread the cream cheese mixture evenly over the cooled cookie crust. Arrange the strawberries and blueberries on one side to represent the blue and red colors of the flag. Place kiwi slices and mandarin orange segments on the other side for green and orange accents. Garnish with fresh mint leaves if desired. Slice and serve immediately or chill for 30 minutes before serving.
