This creamy, savory hummus is a flavor-packed twist on the classic dip—made with roasted cauliflower for added depth and crisped florets for a delightful crunch. It’s perfect for parties, snacking, or as a healthy spread.
Ingredients

1 medium head cauliflower, cut into florets

2 tbsp olive oil (divided)

Salt & pepper, to taste

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

2 cloves garlic

Juice of 1 lemon

1/2 tsp ground cumin
-
2–4 tbsp water (as needed for blending)

Optional toppings: paprika, extra olive oil, crispy cauliflower bits, parsley
Instructions

Roast Cauliflower:
Toss florets with 1 tbsp olive oil, salt, and pepper. Roast at 400°F (200°C) for 25–30 minutes until golden and crispy at the edges. Set aside a few pieces for topping. -
Blend Hummus:
In a food processor, combine roasted cauliflower, chickpeas, tahini, garlic, lemon juice, cumin, and 1 tbsp olive oil. Blend until smooth, adding water 1 tbsp at a time to reach desired consistency. -
Season and Serve:
Taste and adjust salt, lemon, or garlic. Spoon into a bowl, drizzle with olive oil, and garnish with crispy cauliflower bits and optional toppings.

For a smoky twist, add a pinch of smoked paprika or roast the cauliflower with curry spices.
