  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 cups beef broth

  • 8 oz Velveeta cheese, cubed

  • 1 cup sour cream

  • 12 oz penne pasta

  • 1 tbsp olive oil

  • Salt and pepper to taste

  • Fresh parsley (optional, for garnish)


Instructions

  • Cook penne pasta according to package instructions; drain and set aside.

  • In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until softened, about 3 minutes.

  • Add ground beef, cook until browned and no longer pink. Drain excess fat if needed.

  • Pour in beef broth and bring to a simmer. Stir in Velveeta cubes until melted and smooth.
