Ingredients

8 oz pasta (penne, fusilli, or your choice)

1 tbsp olive oil

2 garlic cloves, minced

1 cup cherry tomatoes (or 1/2 cup canned diced tomatoes)

5 oz baby spinach

1 (5–6 oz) can tuna in olive oil, drained

1/2 cup heavy cream (or half-and-half)

1/4 cup grated Parmesan cheese

Salt & pepper, to taste

Optional: chili flakes, fresh basil
Instructions

Cook pasta according to package instructions. Drain and set aside.

In a skillet, heat olive oil over medium heat. Sauté garlic and tomatoes for 2–3 minutes until soft.

Add spinach and stir until wilted.

Mix in tuna, then pour in cream and Parmesan. Stir to combine and let simmer for 2–3 minutes.

Toss in cooked pasta and mix well. Season with salt, pepper, and chili flakes if using.
