Description

This comforting pasta dish combines flaky tuna, a creamy tomato sauce, and tender spinach for a satisfying meal that’s packed with flavor and ready in no time. Perfect for busy weeknights or when you want a hearty, healthy-ish dinner fast!


Ingredients

  • 8 oz pasta (penne, fusilli, or your choice)

  • 1 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 cup cherry tomatoes (or 1/2 cup canned diced tomatoes)

  • 5 oz baby spinach

  • 1 (5–6 oz) can tuna in olive oil, drained

  • 1/2 cup heavy cream (or half-and-half)

  • 1/4 cup grated Parmesan cheese

  • Salt & pepper, to taste

  • Optional: chili flakes, fresh basil


Instructions

  1. Cook pasta according to package instructions. Drain and set aside.

  2. In a skillet, heat olive oil over medium heat. Sauté garlic and tomatoes for 2–3 minutes until soft.

  3. Add spinach and stir until wilted.

  4. Mix in tuna, then pour in cream and Parmesan. Stir to combine and let simmer for 2–3 minutes.

  5. Toss in cooked pasta and mix well. Season with salt, pepper, and chili flakes if using.

  6. Serve warm, topped with extra Parmesan or basil if desired.

  • Use Greek yogurt or light cream for a healthier sauce option.

  • Add olives or capers for a Mediterranean twist.
