Ingredients

  • 8 oz penne or pasta of choice

  • 12 oz smoked sausage (andouille or kielbasa), sliced

  • 1 tbsp olive oil

  • 1 tbsp Cajun seasoning

  • 3 garlic cloves, minced

  • 1/2 cup diced onion

  • 1 cup heavy cream

  • 1/2 cup chicken broth

  • 1/2 cup grated Parmesan cheese

  • Salt & pepper, to taste

  • Optional: chopped parsley or red pepper flakes for garnish


Instructions

  1. Cook pasta according to package directions; drain and set aside.

  2. In a large skillet, heat olive oil over medium heat. Add sausage and sauté until browned.

  3. Add onion and garlic; cook until fragrant, about 2 minutes.

  4. Sprinkle in Cajun seasoning, then pour in cream and chicken broth. Stir and simmer for 3–4 minutes.

  5. Add Parmesan, stir until melted and sauce thickens slightly.

  6. Toss in cooked pasta and mix to coat. Season with salt and pepper.

  7. Garnish with parsley or red pepper flakes if desired, and serve warm.

Notes

  • Use half-and-half instead of heavy cream for a lighter version.

  • Add bell peppers or spinach for extra veggies and color.

  • Adjust Cajun seasoning to your spice preference — some blends are saltier than others.
