Ingredients

  • 1 cup strong brewed espresso or coffee, cooled

  • 1 cup canned coconut milk (full fat)

  • 1/2 cup sweetened condensed milk

  • 1/4 cup unsweetened cocoa powder

  • 1 tsp vanilla extract

  • Pinch of salt

  • Optional: chocolate chips or shredded coconut for mix-ins


Instructions

  1. Mix Ingredients: In a bowl, whisk together espresso, coconut milk, condensed milk, cocoa powder, vanilla, and salt until smooth.

  2. Add Mix-ins: Stir in chocolate chips or shredded coconut if desired.

  3. Pour & Freeze: Pour mixture into popsicle molds. Insert sticks and freeze for at least 4 hours or until solid.
