Ingredients
2 large flour tortillas 1 pound boneless, skinless chicken breasts 2 tablespoons olive oil 1 tablespoon chipotle chili powder 1 teaspoon garlic powder Salt and pepper to taste 1 cup cooked rice 1 cup black beans, rinsed and drained 1/2 cup shredded cheddar cheese 1/2 cup shredded lettuce 1/4 cup diced tomatoes 1/4 cup diced red onion 1/4 cup chipotle ranch dressing Fresh cilantro for garnish
Instructions
Preheat grill or grill pan over medium-high heat. In a bowl, toss chicken with olive oil, chipotle chili powder, garlic powder, salt, and pepper. Grill chicken for 6-7 minutes per side or until cooked through. Remove chicken and let rest for 5 minutes, then slice thinly. Warm tortillas on the grill or stovetop. Layer each tortilla with rice, black beans, sliced chicken, cheese, lettuce, tomatoes, and red onion. Drizzle chipotle ranch dressing over the fillings. Roll the tortilla tightly into a burrito.
