For the Ranch Slaw:

  • 2 cups shredded cabbage (green or purple)

  • 1/2 cup shredded carrots

  • 1/4 cup ranch dressing

  • 1 tbsp fresh cilantro, chopped

  • Juice of 1/2 lime

  • Salt and pepper, to taste

For Serving:

  • 8 small corn or flour tortillas

  • Lime wedges

  • Extra cilantro for garnish


Instructions

  • Marinate Shrimp: Toss shrimp with chipotle BBQ sauce, olive oil, salt, and pepper. Let sit 5 minutes.

  • Make Slaw: In a bowl, combine cabbage, carrots, ranch dressing, cilantro, lime juice, salt, and pepper. Mix well and chill.

  • Cook Shrimp: Heat a skillet over medium-high heat. Cook shrimp 2–3 minutes per side until opaque and cooked through.

  • Assemble Tacos: Warm tortillas. Divide shrimp and ranch slaw evenly among tortillas. Garnish with extra cilantro and lime wedges.
