Ingredients

2 boneless, skinless chicken breasts (halved and pounded thin)

1 cup all-purpose flour

2 large eggs, beaten

1 cup Italian-style breadcrumbs

1/2 cup grated Parmesan cheese

Salt & pepper, to taste

1/3 cup olive oil (for frying)

Lemon wedges, for serving

Optional: chopped parsley, arugula salad for garnish
Instructions

Prep Chicken:
Slice and pound chicken breasts to 1/4-inch thickness. Season with salt and pepper. -
Dredge:
Coat chicken in flour, dip in beaten eggs, then press into breadcrumb-Parmesan mixture. -
Fry:
Heat olive oil in a skillet over medium heat. Fry chicken 2–3 minutes per side until golden and crispy. Transfer to paper towel-lined plate. -
Serve:
Serve hot with lemon wedges and optional salad or pasta.
Notes

Make it lighter by baking at 425°F for 15–18 minutes, flipping halfway.

Swap breadcrumbs for panko for extra crunch.
