Description

This Cherry Almond Tiramisu is a charming twist on the Italian classic—layers of almond-soaked ladyfingers, sweet cherry preserves, and a luscious mascarpone cream. It’s light, indulgent, and perfect for entertaining or a special treat at home.

For the Cream Layer:

  • 1 cup mascarpone cheese

  • ½ cup heavy cream

  • ¼ cup powdered sugar

  • 1 tsp vanilla extract

  • ¼ tsp almond extract

For Assembly:

  • 1620 ladyfinger cookies (savoiardi)

  • ½ cup strong brewed coffee or espresso, cooled

  • ¼ cup amaretto liqueur (or almond syrup for non-alcoholic version)

  • ½ cup cherry preserves or cherry compote

  • ¼ cup sliced almonds, toasted (for topping)

  • Fresh cherries (optional, for garnish)



Instructions

  • Make the cream: In a bowl, beat mascarpone, cream, powdered sugar, vanilla, and almond extract until smooth and fluffy.

  • Mix soaking liquid: Combine cooled espresso with amaretto (or almond syrup).

  • Assemble the layers:

    • Quickly dip ladyfingers into the coffee mixture (don’t soak too long).

    • Arrange a layer in the bottom of an 8×8-inch dish.

    • Spread half the mascarpone cream over the ladyfingers.

    • Spoon dollops of cherry preserves on top and gently swirl.

  • Repeat with another layer of dipped ladyfingers, remaining cream, and more cherry preserves.

  • Top & chill: Sprinkle with toasted almonds. Cover and refrigerate for at least 4 hours or overnight.

  • Garnish with fresh cherries before serving, if desired.

Notes

  • Use cherry pie filling or homemade cherry compote if preferred.

  • For a crunchier twist, add crushed amaretti cookies between the layers.

  • Can be made up to 2 days in advance—flavor improves as it sits!
