Ingredients

1 ½ lbs baby red potatoes, diced

14 oz smoked sausage, sliced

1 packet ranch seasoning mix

2 cups shredded cheddar cheese

2 tbsp olive oil

2 green onions, chopped (optional for garnish)
Instructions

Preheat oven to 400°F (200°C).

In a large bowl, toss diced potatoes with olive oil and ranch seasoning.

Spread potatoes on a greased baking sheet and roast for 25 minutes.

Add sliced smoked sausage to the pan and stir to combine.

Return to oven and bake for an additional 15 minutes.
