For the Chicken:

  • 1 lb boneless, skinless chicken thighs or breasts

  • 1 tbsp olive oil

  • 1 tsp allspice

  • 1 tsp paprika

  • 1/2 tsp garlic powder

  • 1/2 tsp thyme

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/4 tsp cayenne pepper (optional, for heat)

  • Juice of 1 lime

For the Spiced Rice:

  • 1 tbsp olive oil

  • 1/2 onion, chopped

  • 1 garlic clove, minced

  • 1 cup long grain rice

  • 1/2 tsp turmeric

  • 1/2 tsp cumin

  • 1/4 tsp cinnamon

  • 1 3/4 cups chicken broth

  • 1/4 cup chopped bell peppers (optional)

  • 1/4 cup chopped fresh cilantro or parsley (for garnish)


Instructions

  1. Season Chicken: Mix spices and lime juice. Coat chicken and marinate for 10 minutes.

  2. Cook Chicken: Heat oil in a skillet over medium heat. Sear chicken for 5–6 minutes per side until cooked through. Remove and set aside.

  3. Make Rice: In the same pan, add oil, onion, and garlic. Sauté 2–3 minutes. Stir in rice, turmeric, cumin, and cinnamon.

  4. Simmer: Pour in chicken broth and bell peppers. Bring to a boil, then reduce heat, cover, and simmer for 18–20 minutes until rice is tender.

  5. Serve: Slice chicken and place over rice. Garnish with cilantro or parsley.

Notes

  • Substitute coconut milk for part of the broth for a creamier, tropical flavor.
