These mini Buckeye Bites are a bite-sized twist on the classic peanut butter and chocolate treat. Easy to make, no baking required, and perfect for snacking, gifting, or party trays!
Ingredients

1 cup creamy peanut butter

1/4 cup unsalted butter, softened

2 cups powdered sugar

1/2 tsp vanilla extract

1½ cups semi-sweet chocolate chips

1 tbsp coconut oil or shortening (optional, for smoother chocolate)
Instructions

Make Peanut Butter Balls:
Mix peanut butter, butter, vanilla, and powdered sugar until a thick dough forms. Roll into 1-inch balls and place on a parchment-lined tray. Chill in freezer for 20–30 minutes. -
Melt Chocolate:
In a microwave-safe bowl, melt chocolate chips (and coconut oil, if using) in 30-second intervals, stirring until smooth. -
Dip & Chill:
Use a toothpick to dip each ball halfway into chocolate, leaving a “buckeye” peek of peanut butter showing. Place back on tray and chill until set. -
Serve or Store:
Store in an airtight container in the fridge for up to 2 weeks.
