Buckeye Bites: Irresistible Chocolate Peanut Butter Treats

  • Author: meryem srhir
  • Total Time: 50 minutes
  • Yield: About 30 bites 1x

Description

These mini Buckeye Bites are a bite-sized twist on the classic peanut butter and chocolate treat. Easy to make, no baking required, and perfect for snacking, gifting, or party trays!

Ingredients

Scale
  • 1 cup creamy peanut butter

  • 1/4 cup unsalted butter, softened

  • 2 cups powdered sugar

  • 1/2 tsp vanilla extract

  • 1½ cups semi-sweet chocolate chips

  • 1 tbsp coconut oil or shortening (optional, for smoother chocolate)

Instructions

  1. Make Peanut Butter Balls:
Mix peanut butter, butter, vanilla, and powdered sugar until a thick dough forms. Roll into 1-inch balls and place on a parchment-lined tray. Chill in freezer for 20–30 minutes.

  2. Melt Chocolate:
In a microwave-safe bowl, melt chocolate chips (and coconut oil, if using) in 30-second intervals, stirring until smooth.

  3. Dip & Chill:
Use a toothpick to dip each ball halfway into chocolate, leaving a “buckeye” peek of peanut butter showing. Place back on tray and chill until set.

  4. Serve or Store:
Store in an airtight container in the fridge for up to 2 weeks.

Notes

  • Use crunchy peanut butter for added texture.

  • Great for holidays — make ahead and freeze for up to 2 months.

  • For full chocolate coating, dip entire ball.
