Description

Ingredients

  • 1 can (15 oz) black beans, rinsed and drained

  • 1 cup corn (fresh, canned, or thawed frozen)

  • 1 medium red bell pepper, diced

  • 1 small red onion, finely diced

  • 12 jalapeños, seeded and minced (optional)

  • 1 avocado, diced (optional for extra creaminess)

  • ¼ cup fresh cilantro, chopped

  • Juice of 2 limes

  • 2 tbsp olive oil

  • Salt and pepper, to taste


Instructions

  1. Combine Ingredients:
    In a large bowl, mix together black beans, corn, red bell pepper, red onion, jalapeños, avocado (if using), and cilantro.

  2. Add Dressing:
    Drizzle with olive oil and lime juice. Toss gently to combine.

  3. Season and Chill:
    Season with salt and pepper to taste. Chill for 15–30 minutes to let the flavors meld (optional, but recommended).

  4. Serve:
    Enjoy with tortilla chips, on tacos, or as a refreshing side dish!

Notes

  • Want it spicier? Add extra jalapeño or a pinch of cayenne.
