Description

Tender, marinated beef chunks grilled to juicy perfection with colorful veggies on skewers—these beef shish kabobs bring smoky, savory flavors that are perfect for summer cookouts or easy weeknight dinners.


Ingredients

  • 1 ½ lbs beef sirloin or ribeye, cut into 1-inch cubes

  • 1/4 cup olive oil

  • 2 tbsp soy sauce

  • 2 tbsp lemon juice

  • 3 garlic cloves, minced

  • 1 tsp dried oregano

  • 1 tsp ground cumin

  • Salt and pepper, to taste

  • 1 red bell pepper, cut into chunks

  • 1 green bell pepper, cut into chunks

  • 1 red onion, cut into chunks

  • Wooden or metal skewers (if wooden, soaked in water for 30 minutes)


Instructions

  1. Marinate Beef:
    In a bowl, combine olive oil, soy sauce, lemon juice, garlic, oregano, cumin, salt, and pepper. Add beef cubes and toss to coat. Marinate for 1–2 hours in the fridge.

  2. Prepare Skewers:
    Thread beef, bell peppers, and onion alternately onto skewers.

  3. Preheat Grill:
    Heat grill to medium-high.

  4. Grill Kabobs:
    Grill skewers for 4–6 minutes per side, turning to char all sides and cook beef to desired doneness.

  5. Serve:
    Remove from grill and let rest 5 minutes. Serve with rice, salad, or flatbread.

Notes

  • For extra flavor, add mushrooms, zucchini, or cherry tomatoes to skewers.

  • Use a meat thermometer for perfect doneness: 130°F for medium-rare, 140°F for medium.

  • Soaking wooden skewers prevents burning.

  • Marinate longer (up to 8 hours) for deeper flavor.
