Ingredients

  • 4 thick slices of brioche or challah bread

  • 2 ripe bananas, sliced

  • 2 large eggs

  • 1/2 cup milk

  • 1 tsp vanilla extract

  • 1/2 tsp ground cinnamon

  • Butter, for frying

  • Optional toppings: maple syrup, powdered sugar, whipped cream


Instructions

  • Prepare the Filling:
    Layer banana slices between two slices of bread to make 2 “sandwiches.”

  • Make the Batter:
    In a shallow bowl, whisk eggs, milk, vanilla, and cinnamon.

  • Dip & Cook:
    Dip each sandwich into the egg mixture, coating both sides well.

  • Fry:
    Melt butter in a skillet over medium heat. Cook each sandwich 2–3 minutes per side until golden brown and crisp.

  • Serve:
    Slice in half and serve with maple syrup, powdered sugar, or your favorite toppings.

Notes

  • Add a spoonful of Nutella, peanut butter, or cream cheese inside for extra richness.

  • Use day-old bread for best texture — it holds up better when dipped.
