4 thick slices of brioche or challah bread

2 ripe bananas, sliced

Instructions

Prepare the Filling:
Layer banana slices between two slices of bread to make 2 “sandwiches.” -
Make the Batter:
In a shallow bowl, whisk eggs, milk, vanilla, and cinnamon. -
Dip & Cook:
Dip each sandwich into the egg mixture, coating both sides well. -
Fry:
Melt butter in a skillet over medium heat. Cook each sandwich 2–3 minutes per side until golden brown and crisp. -
Serve:
Slice in half and serve with maple syrup, powdered sugar, or your favorite toppings.
