Soft, custardy French toast baked with creamy ricotta and juicy blackberries creates a luxurious breakfast or brunch treat that’s both impressive and easy to make.

Ingredients

Scale
  • 8 slices thick bread (brioche or challah recommended)

  • 1 cup ricotta cheese

  • 1 1/2 cups fresh blackberries

  • 4 large eggs

  • 1 1/2 cups milk

  • 1/4 cup maple syrup (plus extra for serving)

  • 1 tsp vanilla extract

  • 1/2 tsp ground cinnamon

  • Pinch of salt

  • Powdered sugar (optional, for dusting)

Instructions

  1. Preheat Oven: To 350°F (175°C).

  2. Prepare Custard: In a bowl, whisk eggs, milk, maple syrup, vanilla, cinnamon, and salt.

  3. Assemble: Spread ricotta on each bread slice, then layer blackberries. Arrange bread slices in a greased baking dish. Pour custard evenly over the top.

  4. Bake: Let soak 10 minutes, then bake 35–40 minutes until set and golden.

  5. Serve: Dust with powdered sugar and drizzle with extra maple syrup.

Notes

  • Use day-old bread for better custard absorption.

  • Substitute blackberries with blueberries or raspberries if desired.

  • For extra richness, stir a tablespoon of cream cheese into the ricotta.

  • Best served warm with fresh fruit or whipped cream.
