Description

Ingredients
4 cups chopped rhubarb 1 cup granulated sugar 2 tablespoons all-purpose flour 1 teaspoon vanilla extract 1 cup old-fashioned rolled oats 1/2 cup all-purpose flour 1/2 cup brown sugar 1/2 cup unsalted butter, melted 1/2 teaspoon ground cinnamon Pinch of salt
Instructions
Preheat oven to 375°F (190°C). In a mixing bowl, combine rhubarb, sugar, 2 tablespoons flour, and vanilla extract. Pour the rhubarb mixture into a greased 8×8-inch baking dish. In another bowl, mix oats, 1/2 cup flour, brown sugar, cinnamon, and salt. Stir in melted butter until mixture is crumbly. Sprinkle oat mixture evenly over rhubarb. Bake for 35-40 minutes or until topping is golden and filling is bubbly. Allow to cool slightly before serving.
Notes
Use fresh or frozen rhubarb (if frozen, thaw and drain excess liquid). Serve warm with whipped cream or vanilla ice cream. For extra crunch, add chopped nuts to the topping.
